# What is the order of the steps on an egg grading line?

## What are the mandatory steps on the line?

Article 223 of RIISPOA requires four procedures from egg establishments, in the order they appear in the text. The regulation does not detail the physical layout, but each procedure needs its place on the line.

1. Assess the general cleanliness and integrity of the shell (item I).
2. Examine the eggs by candling (item II).
3. Grade the eggs as Class A or Class B (item III and art. 224), and by weight under RTIQ (art. 224, sole paragraph).
4. Check the hygiene and integrity of the packaging (item IV).

## Where does washing fit, and when is it mandatory?

Washing is mandatory only for dirty, intact eggs going to processing (MAPA, question 28; question 38, which cites art. 18 of Ordinance 612). Cracked eggs cannot be washed (question 28), and washing must be done entirely by mechanical means, at any size of establishment (question 30).

## Where does pre-selection go?

Pre-selection sits before candling, and it is mandatory only on flows with washing before candling: in a continuous line, or when washing, even in equipment outside the line, happens together with grading (question 24).

### Is pre-selection always mandatory?

No. Under MAPA question 24, it is mandatory only when the flow has washing before candling in a continuous line, or when eggs coming back from the washer mix with those entering grading. Without that washing, the answer does not require the step.
